Buldak is a very spicy Korean dish that is fast becoming popular among Koreans. The name ‘buldak’ literally means ‘fire chicken’ due to the spiciness. Fuyuan Foods created the dish in 2000 and it is believed to help relieve stress due to the chemical, capsaicin that is present in pepper. Eat this dish in front of friends for instant recognition and self-esteem boost.
There are several buldak restaurants around Korea but the dish can also be prepared at home. Preparing the dish at home allows the cook to adjust the amount of pepper in the dish according to preference.
Soy sauce, pepper, honey, rice wine, sliced scallion, sesame seed oil and other preferred spices are poured over raw chicken, mixed thoroughly and refrigerated for at least one hour. The chicken is then fried or baked until it is cooked. For the ‘fire’ sauce; gochujang, gochujaru, soy sauce, sesame oil, honey, sugar, mustard, garlic, onion and Korean pear are blended together. The sauce is then added to the fried chicken and simmered over low heat until the chicken pieces are properly coated.
Served with rice as a meal or with soju as a snack.
