Bajirak is a common Korean shellfish known as manila clam or short-neck clam toforeigners. It is often used for making soup broth and gives an unusual anddelicious taste to soup. Kal-guksu means handmade and knife-cut noodles.Bajirak Kal-guksu is usually made and eaten during summer though some considerit impractical as it is supposed to be eaten hot.
The ingredients used in making the dish include Kal-guksu noodles, clams, onions,zucchinis, potatoes, carrots, spring onions, anchovy powder, soy sauce, garlic,kelp and salt. Other shellfish can also be used as a substitute for manilaclams.
The taste gotten from combining the broth with the chewy noodles is heavenly. Servewith Kimchi, preferably freshly made.
