A delightful meal full of flavours, Baek Kimchi is a delicate and non-spicy Kimchi meal. It is made with cabbage and without the chili pepper common in other Kimchi meals. In a sense, it is more traditional than the common Kimchi as spicy Kimchi only started gaining ground in the 16th century when red chili peppers were first adopted in Korea.
Baek Kimchi has a mild flavour and crunchy texture that makes it suitable as an appetizer for main dishes like Bulgogi. The main ingredient is Korean cabbage. Radish, mustard leaves, green onions , pear, edible mushrooms and other vegetables of choice are also used in its preparation.
It can be served at any time of the day. It works well with grilled meat or any spicy dish. It may be cut into small, bite size pieces or used to wrap cooked rice, meat and/or other condiments.
It is suitable for children and adults who cannot eat spicy food. It can not be stored for a long time due to the lack of chili pepper which helps preserve other Kimchi.
